Wanton Nacho Cakes
If you're in the mood for a little spicy snack, you have got to try these. They are really simple to do and don't take too much time. Here is what you need:
1. Muffin Pan-we used a mini muffin pan but a large one works as well.
2. Cooking Spray
3. Wanton Wrappers
4. Jalapeno
5. Onion-we used yellow but white works to.
6. Shredded Chicken-you can use large chicken breast or canned chicken. We used the canned kind.
7. Re fried Beans
8 .Cheese-mozzarella/cheddar
9. Tomato
10. Avocado
11. Sour Cream
12. Sriracha Sauce-also known as Rooster Sauce.
13. Salsa
Pre-heat the oven to 325. Start off by pan frying your chicken with the salsa mixed in. We used about half a cup of salsa. Spray the muffin pan with cooking spray of some sort(we used the olive oil kind). For the mini muffin pan use one wanton wrapper per slot. Place the wrapper in the slot so that the edges all around are sticking up above the the pan. Place a small amount of sour cream in the bottom followed by the re fried beans. Then place a spoonful of the chicken into the wanton. Then add toppings as you like until you have reached the top of the muffin pan. Then place some cheese and a single Jalapeno to the top. Spray all the wantons with a light coating of cooking spray. This will brown the wantons. Put it in the oven for 15-20 minutes or until golden brown on the top edges of the wanton. Note: the bottoms of the wantons will still be a little soft.
Any ingredients can be added or subtracted as you like. Have fun with this as the possibilities are endless. I hope you enjoy this tasty snack as much as we did!
